Meatball Appetizers

Ingredients

  • 400 gr minced lamb
  • 130 gr Milcobel Mozzarella (Single loaf Block)
  • 1 shallot or small sweet onion finely chopped
  • 1 tbsp finely chopped ginger
  • 3 cloves of pressed or minced garlic
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp dry sherry or Shaoxing rice wine
  • 2 tsp palm sugar
  • 1 egg
  • 1 tbsp breadcrumbs
  • 2 tbsp chopped Thai basil
  • 2 tbsp chopped fresh coriander (cilantro)
  • 150 coarsely chopped water chestnuts
  • 1 tsp five-spice powder ( cinnamon, galangal, fennel, star anise seed, black cardamom)
    Or any other of your favourite spices for lamb meat such as Cumin, black pepper, cayenne etc…

Recipe

  1. Fry the onion, garlic and ginger in a little oil.
  2. Put the minced meat in a blender with the remaining ingredients.
  3. Add seasoning.
  4. Turn blender on low and add fried onion, garlic and ginger. Blend well.
  5. Take the Single loaf of Milcobel Mozzarella and use a melon baller to scoop out 10 cheese balls (about 10gr / pc).
    Alternatively: use a knife to dice the Single loaf in pieces of about 10gr each.
  6. Portion the meat mixture in 10 equal portions (40 gr / pc). Next roll the portions into 10 round meatballs using wet hands.
  7. Push the Mozzarella Cheese balls (or Mozzarella Cheese cubes) inside the meatball and shape the meat around the cheese balls.
  8. Fry the meatballs in a little oil.
    Alternatively: arrange the meatballs on a wire rack and bake in a pre-heated oven (180°C-200°C) for 10-20 minutes until cooked through.

Note: Serve with your favourite dipping sauces. We can recommend Sriracha Mayo Sauce, Sweet Chilli sauce, Kecap Manis (sweet soy sauce). Or sprinkle with crispy seaweed.
