Shrimp crackers with garlic mayonnaise


For 4 persons

  • 2 rice leaves
  • 4 dabs of garlic mayonnaise
  • grated Bruges Comtesse
  • marinated mustard seeds

For the garlic mayonnaise:

  • 2 tbsp mustard
  • 2 tbsp water
  • 2 tbsp vinegar
  • 1 egg
  • 4dl peanut oil
  • 2 cloves of garlic


Put everything in a measuring cup and mix to make mayonnaise.

Deep-fry the rice leaves at high temperature (190°) to make crackers. Crack 8 crackers and drizzle garlic mayonnaise on top. Grate the Brugge Comtesse on top and add some more mayonnaise, the marinated mustard seeds and some greens (e.g. dill, chervil, chives or a garlic flower).
